about a week ago, i became obsessed with the idea of making risotto. it must be the freezing cold weather. one night last week, i made a tasty risotto with peas, red peppers and garlic. it turned out pretty well, so i got confident -- perhaps even cocky. and sadly, tonight while the baby wailed in her chair, i made a horrible, perhaps even disgusting, risotto.
my effort began well -- i bought white wine (i didn't have any for the last batch) and a new veggie stock that looked good. i decided i would just throw in whatever organic produce was around the house. i chose fresh sweet corn, garlic, zucchini, and sweet potatoes. i diced the zucchini and sweet potatoes up small and sauteed them for a while, then added them to the risotto at the very end. i must have forgotten that sweet potatoes are not the same as yams (which is what i thought i was putting in the dish). sweet potatoes are GROSS. no amount of fresh herbs, white wine, or avocado could really fix the nastiness created by the sweet potatos. i also found out that my new stock had no salt in it, and so i ended up adding a TON of salt at the end, but it didn't really help. sweet potato risotto is sweet, and added salt just makes it salty on top of it's sickening sweetness.
i think i'll stick to more conventional ingredients for my next risotto, and i will try to find some decent veggie stock. each ingredient becomes even more precious when you aren't adding cheese at the end, which probably goes a long way towards masking weird flavors. or maybe i should stick to take-out...
